Kiritanpo (きりたんぽ) is an Akita Prefecture cuisine. Freshly cooked local brand rice “Akita Komachi” is pounded until somewhat mashed, then formed into cylinders around Japanese cedar skewers, and toasted. It can then be served with sweet miso or used as dumplings in hot pot.
